Tangy Raw Mango and Mint Drink ‘Aam Zhor’ Recipe:

The temperature today rose to a high of 46oC making it the hottest day of the season. Phew! Oh lord, the Mighty Sun, pray please release us of thy curse. While my prayers will continue until the rains arrive, I had to do something to avoid catching a sun-stroke right. Loads of water to keep hydrated and not to step out in the sun with an empty stomach is what Granny would say if she was around. Mummy on the contrary would bring us glass of ‘Aam Zhor’(aam=mango; zhor=gravy) and let us to go out once we had emptied the glass.

Tangy Raw Mango and Mint Drink  ‘Aam Zhor’

Aam Zor or Aam Panna , many a names to the same drink, is an ultimate  Indian summer drink made from raw mangoes.  While, the more famous ‘Aam Panna’ is prepared by boiling raw mango pieces and blending it with other ingredients, I prefer the rather obscure Eastern Indian version called ‘Aam Zhor’. Aam Zhor involves roasting the raw mangoes over fire, hence adding a  rustic flavor to the drink. Chicken Sausage Spring Rolls with Mint & Cream Sauce Recipe:

It was during my grocery shopping early this month that I had picked a packet of rice paper and it has been lying there in my stock. In fact I often pick up a lot of stuff just like that, while most of it I try and use before they reach expiry but some do cross the line and get wasted. I am so obsessively compelled at those times that I can’t pull myself away from the colorful packets at the grocery store shelf. It’s the exciting possibilities that snap through my head while looking at those ingredients that I am often left with an inflated bill at the end. While I do always resolve not to buy stuff without a definite plan but I just fail to keep it. Wonder, if its just me alone or are there some of you too who share this ‘compulsive buying disorder’ with me?

Nonetheless, I’ve once again resolved to improve on the habit (lets see how i do when i go shopping next), for now I am happy about having done justice to at least one of those ingredients.  The pack of rice paper was more than well consumed in preparing a fresh and crunchy brunch of Chicken Sausage Spring Roll with some Mint & Cream Sauce.

Saturday Night Indulgence

Chicken Korma, Served with Pudina Parantha (Mint Flavored Indian Bread) & Fresh Coriander Chutney (Sauce)

It’s unusually cool and windy right in the middle of April here in Delhi, whatever be the reason it is such a welcome excuse for a rich and indulging Indian Dinner.

My weekend menu usually consists of non-vegetarian food.  So I usually buy some meat on Friday or Thursday and marinate it in some vinegar, chilies & few drops of oil and refrigerate. Marinating in these basic ingredients leaves my recipe option completely open and also a well marinated meat on cooking turns out much juicer and tender. With the chicken already there I decided on a special Sunday Night dinner keeping my North-Indian taste buds in mind, a hearty meal of Chicken Korma served with Pudina Paratha & Fresh Coriander Chutney.
