Health, taste, holiday planning and a quick chick twist to our Desi Sprout Salad.

The month just flew away in a jiffy, in fact half a year has already gone by and this once I am thinking of my resolution in time to fix it. Yeah, so I am running if only for a week now but I am finally doing it.  And it doesn’t end there I am running, eating healthy and on time, but touch wood for falling prey to the attractive lazy life may just happen any day. Pray for me guys for I have to shed those extra 4 kg to reach the perfect BMI (its 23.4 I am told) before my next to next holiday for I hate looking at extra tires. Yes, next to next for my next holiday to Sri Lanka (Yay ya ya Yay…) begins on this 5th and loosing 4 kg in 5 days is not happening so I’ve shifted my targets a bit.

A summer special, watermelon, red onion, olives,salad rocket and ricotta salad with minimalistic dressing.

If the combination sounds incredible, I won’t blame you for when I had heard of it first I thought quite the same myself. However, no sooner did I try my first watermelon salad with olives and cheese my doubts were put to rest forever. Often what appears to be the most improbable turns out to be most fantastic, and this one recipe is a perfect example to quote.

Prawn and Couscous salad with Vietnamese dressing, a weight-watcher’s healthy summer lunch.

The temperature is soaring in Delhi by the day, and we are now  into the days when one does want to gorge but on fresh and light food only. While light food as you know is quite difficult given the awesome spicy  curries that’s inherent to our Indian cooking, I just try (you’d better associate to the word ‘TRY’ if you’ve read my previous post) to keep my lunches light, fresh yet hearty.

Crispy Sesame Tofu and Pasta Salad Recipe:

A healthy Sesame Tofu and Tagliatelle salad with a sweet, tangy and hot dressing.

The salad days are here and it’s now time that nothing but some refreshing salads would satisfy our appetite. Wonder if it’s just me or the scorching sun and heat leaves you too craving for light and fresh food, especially for lunches.

Salads serve to be my best bet, besides being both refreshing and light its helps me add healthy food to my diet. Now while summers are long here in our part of the world I keep playing with the ingredients and varieties for salad to ensure that I don’t get bored by the monotony of only raw-crunch-crunch. Adding some pasta or grilled meat or paneer or even better the tofu to the salads simply uplifts it by a notch and makes it more interesting and wholesome meal for the ravenous stomach.

A Spicy Tomato and Spinach Soup with fresh Basil made from scratch.

At the end of a hectic cold winter day nothing comes close to the warmth of a hot bowl of a delicious soup. It simply renews, infuses life back into the freezing bones, and opens up our senses by soothing our aching throats and running noses. While a packet of instant soup mix might come quite handy on occasions like these, but you’ll not do it if you are a conscious eater like me. I keep myself as far away as possible from Instant/ready to eat meals and why not when there are so many quick yet scrumptious cooking options we can pick from.

This recipe is an adaptation of a childhood winter favorite from my Mummy’s kitchen, her quick all-veggie soup. Mom would actually quite smartly add all available winter veggies to this soup, especially the ones we wouldn’t eat otherwise, and we (me & bro) morons would slurp it up to the very last drop. I, however, just used tomatoes and spinach as my basic ingredient and added basil as an inspiration from the celebrated tomato-basil soup. This spinach and tomato soup was all I could ask for at the end of a tiring day, a warming, tasty and healthy revival.

Vietnamese Veg Rolls Recipe:

Fresh Vietnamese style rolls with a tangy dipping sauce.

It was a pleasant bout of freshness as I bit into these neatly wrapped parcels. It isn’t very often that an absolutely simple dish sweeps you off your feet with its clean, defined and refreshing flavours. It was certainly a welcome change from the entire festive fetish for rich food. It’s in fact quiet fascinating to observe how Vietnamese food has found its way into Indian culinary concourses lately, but that’s should be no surprise for the cuisine is a perfect answer to our quest for eating fresh, light food that relies on fresh herbs, uses minimal oil and yet delivers recipes packed with piquant flavours. Not to forget the visual appeal of the vibrant fresh ingredients used in their recipes that makes them an irresistible eye-candy too.

I made these quick rolls or ‘Goi cuon’ (as called in Vietnamese) for lunch using the fresh veggies in stock, while adding some tofu or chicken or fish would be great, an authentic recipe may even call for it but trust me I did not miss the protein in my bite. So I’d leave it on you, if you’d like to add meat or tofu please be my guest. As a matter of fact you may choose to try my earlier versions of the rice paper wraps (click here for the one with chicken and here with tofu).
