The great Indian curry is a pretty fascinating concept for most. I am often asked for a good Indian curry recipe. While i should have an immediate answer, i am left rather confused. This is probably because we have an infinite number of Indian curries. However, how to make Dum Aloo Punjabi always tops the list for what seems like an uncanny reason. Or is it due to the fact that Dum Aloo is also my personal favourite. Furthermore, the list also includes our other most noteworthy gravies like the paneer butter masala, malai koftas, shahi paneer, pindi chole, palak paneer etc….

The trip started with a bad luck as we missed our Delhi-Mumbai flight, our entire trip was saved only because there was enough time to catch another flight and land at Mumbai just in time to board our connecting flight to Colombo. After all the mayhem at Mumbai and Delhi airport we could finally breath only when onboard our Colombo flight, but all the tension during the day left us sleepless and we landed early morning at Colombo without having slept a wink.

A Spicy Tomato and Spinach Soup with fresh Basil made from scratch.
At the end of a hectic cold winter day nothing comes close to the warmth of a hot bowl of a delicious soup. It simply renews, infuses life back into the freezing bones, and opens up our senses by soothing our aching throats and running noses. While a packet of instant soup mix might come quite handy on occasions like these, but you’ll not do it if you are a conscious eater like me. I keep myself as far away as possible from Instant/ready to eat meals and why not when there are so many quick yet scrumptious cooking options we can pick from.
This recipe is an adaptation of a childhood winter favorite from my Mummy’s kitchen, her quick all-veggie soup. Mom would actually quite smartly add all available winter veggies to this soup, especially the ones we wouldn’t eat otherwise, and we (me & bro) morons would slurp it up to the very last drop. I, however, just used tomatoes and spinach as my basic ingredient and added basil as an inspiration from the celebrated tomato-basil soup. This spinach and tomato soup was all I could ask for at the end of a tiring day, a warming, tasty and healthy revival.

Spicy Chicken Thukpa with homemade Whole-wheat Flat Egg Noodles Recipe:
It came as a relief after the dusty windstorm, turned the murky gloom sky to such a lovely chilled weather. You are welcome “Rains”, I know it’s not monsoon yet but what could I welcome more than a good Rain right in the middle of May heat of Delhi. No sooner did the heavy pouring seized I picked my umbrella (for a few droplets were still going pitter patter) pulled up my shorts and went out to enjoy a bracing walk. By the time I was home it was already time that I started preparing for dinner. And once again driven by the chill in the weather it was time for a nice soupy hot meal, what could answer it better than a bowl of the Tibetan Style Spicy Chicken Thukpa with homemade Whole-wheat Flat Egg Noodles.

Chicken stock is an easy find at most super market in Delhi these days; however I prefer preparing it at home myself. I try to use homemade stuff as far as possible for the reasons of health. It’s not that I don’t use packaged food but just I try and avoid it as far as practicable. So I thought of sharing my quick & easy recipe for preparing chicken stock that can be stored in the fridge and used for about 10 days….
Fried Ice-cream with Caramelized Mangoes:
Aren’t mangoes the best things about summers? Well I totally think so, as a matter of fact the only reason why I look forward to this season is for its bounty of juicy Fruits, and Mangoes top the chart.
Well so yesterday when I saw those golden & luscious mangoes at the market, I had to buy a bulk load. Walking my way back home I was so very excited by an ‘idea’, it instantly tickled my sweet tooth (I hope it excites you just as much), only moments later I realized I was smiling split wide open all to myself with some jerks staring at me. I blushed and hurried back home walking two steps at a time.
The idea was to do a dessert that would be called “Fried Ice-cream with Caramelized Mangoes”
Recipe for Caramelized Mangoes:
Of the numerous wonderful ways of relishing the Mangoes one of my favorites is the caramelized mangoes. This simple and quick recipe is absolutely easy to prepare, has a decent shelf life and works as a wonderful topping option across desserts, especially ice creams or simply a loaf of bread toast. The dash of cinnamon that i have added here is certainly optional, however i totally love its flavor and feel that cinnamon infarct lifts its flavor by a couple of notches.
