Lychee Frozen Yogurt Recipe:

It is about summer’s yet another favorite fruit, juicy sweet lychee. I picked up a good 2 kgs of the beautiful red and voluptuous fruit at the market yesterday. I’d be re-iterating when I say I love this season for its bounty of juuuicy fruits; our only consolation as we brave through the rising mercury levels.

Lychee Frozen Yogurt

Anyway now that the Lychee is here, living by our custom a part of it was destined to be consumed fresh on its own and another had to be infused into some recipe. The lychee recipe I am actually doing today is pretty simple and a treat for this weather, a treat that is no less than the one that we pay a fortune for at those “frozen yoghurt parlors” which have mushroomed across our city. I myself have utterly doted them until last summers but then I discovered the recipe which was a pretty simple at that. Do try this one and you would stop only after having licked up the fingers spoon, the Lychee Frozen Yogurt.

Chicken Biryani Recipe

Chicken Biryani Recipe:

Chicken biryani for us Indians is the answer to a delicious and lavish meal. The popularity of this dish across the entire country makes it almost difficult to believe that it did not actually originate in Indian but was rather borrowed from Persia. How we love our ‘Biryani’ is evident from the fact that  every region of our county has its own variation for the recipe, like  Awadhi , Hyderabad ,Kashmiri, Sindhi or Bengali only to name a few.  It is also amazing to notice how the taste of every variety is a unique celebration of flavors on its own.

Chicken Biryani

The biryani recipe that I am sharing today is our favorite, a typical north Indian version that comes pretty close to the Kashmiri style. I’d call it ‘my version’ instead, if that makes you anxious please don’t be for I can give you my word that ‘you would simply love it’.  I am not being arrogant but just confident, and that kind of confidence is only possible when one has received compliments from everyone who has ever tasted the recipe.

PS- I know that ain’t a veg recipe, but do excuse me my little detours at times. 🙂

Spinach and Mushroom Lasagna Recipe:

The main for my Sunday brunch as you already know was the all time favorite Lasagna. I would have loved to use chicken for the filling but sticking to my recent resolution to keep vegetarian for a while I simply took to the traditional Spinach and Mushroom Lasagna cooked with four cheese. Every cheese lover like me ogles over lasagna for all the beautiful lot of cheese that goes into it and not to forget the added health benefit derived from spinach.  Oh I know that’s no solace to healthy food and I must accept this Sunday Brunch was purely and sinfully a treat strictly for the taste buds.
The lasagna or is it lasagna, a quick google and Wikipedia tells me “As with most other types of pasta, the word is a plural form, lasagne meaning more than one piece of lasagna ribbon. ” So once this mystery is solved let me move to the recipe of my Spinach and Mushroom Lasagn.

Coconut and Mango Creme Caramel Recipe:

Cooking a special Sunday brunch has been like a ritual for quite a long time now.  Also for some reason this day has always been a no breakfast day, so that leaves me without enough time to do an extensive brunch meal.  This Sunday was about a delicious (that’s the word he uttered after tasting it, yippee!) Spinach and Mushroom Lasagna, my Watermelon Smoothie and Coconut & Mango Crème Caramel.  My dessert sounds like a ‘plunge’ I know but trust me the plunge was worth it and also I did balance out the extreme by doing a true authentic no-experiment Lasagna.

Tangy Raw Mango and Mint Drink ‘Aam Zhor’ Recipe:

The temperature today rose to a high of 46oC making it the hottest day of the season. Phew! Oh lord, the Mighty Sun, pray please release us of thy curse. While my prayers will continue until the rains arrive, I had to do something to avoid catching a sun-stroke right. Loads of water to keep hydrated and not to step out in the sun with an empty stomach is what Granny would say if she was around. Mummy on the contrary would bring us glass of ‘Aam Zhor’(aam=mango; zhor=gravy) and let us to go out once we had emptied the glass.

Tangy Raw Mango and Mint Drink  ‘Aam Zhor’

Aam Zor or Aam Panna , many a names to the same drink, is an ultimate  Indian summer drink made from raw mangoes.  While, the more famous ‘Aam Panna’ is prepared by boiling raw mango pieces and blending it with other ingredients, I prefer the rather obscure Eastern Indian version called ‘Aam Zhor’. Aam Zhor involves roasting the raw mangoes over fire, hence adding a  rustic flavor to the drink. Zucchini and Tofu Stir Fry (Thai Style) Recipe:

I had half of each yellow and green Zucchini leftover from my yesterday’s recipe of  Zucchini Cheese Fritters and they needed to be used up before they lose their freshness. I don’t like to keep fresh fruits or vegetables in my fridge tray beyond two or three days, so I buy in small quantities and consume them in different recipes back to back. Well, today I also had in stock some Tofu, red bell peppers and a bottle of Thai red-curry paste, bought during grocery shopping early this month. That meant I had all the ingredients in place to relive my Thai experince of a spicy warm salad, so I prepared this easy and delicious recipe that on its own can be enjoyed as a warm salad or served as a side to the maincourse.

Watermelon Smoothie Recipe:

It is an absolutely simple, quick and one of the most refreshing thirst quencher for the season. Summer’s another favorite fruit is the Watermelon. It’s so full of juices that it simply works wonders and cools you all the way down during these heat waves. It is absolutely equally fantastic by itself, simply a bowl full of red juicy watermelons and I just go digging deep.

Zucchini Cheese Fritters Recipe:

They had never been a favorite with us and I had never really cared to cook Zucchini at home until recently. Frankly it was only a part of our dining out menus, that too when they came alongside our main order, as an ingredient or an add-on. But how long could have I ignored those absolutely beautiful yellow and green, succulent looking vegetables that have started appearing in such abundance across all stores and even vegetable carts around our City. Looking at the abundance that they are available in nowadays I wonder if at all they are imported, as claimed by the veggie vendor for a justification to high price.
